It was the month of October, halloween was near.
I had never been a huge halloween fiend but i hope to those of you who may want something nice and warming inside you, this recipe will certainly do that. I used more potatoes than was necessary because i also wanted to give some to a kind neighbour who left a plate of delicious stroganoff outside my door a week ago.
Ingredients:
Potatoes (i would suggest a waxy type of potato)
2 large onions
two capsicum peppers
some frozen spinach
Tomato puree
A cooking apple
Some garlic
A small piece of root ginger
A tin of chick peas
Salt and pepper
some ground turmeric
Cumin seeds i tbsp
ground cinnamon 1 heap tsp
ground coriander 2 tbsp
Whole cardomams 4-6
vegetable stock (2 pints)
Garam masala 1 heap tbsp
Whole pepper hot (3 dried hot peppers)
mustard powder 1 tbsp
One bay leaf
Arrowroot (1 sachet/optional)
Prepare the stock. Pour some of the stock into a saucepan.
Chop the onions and add them to the stock.
Do not let saucepan over heat. Keep at hot but constant temperature.
