Naughty but nice Barbara Ann
Ingredients: Some rhubard One banana Half of a lemon Some high fibre breakfast cereal (2 tablespoonfuls) Trim anc prepare your rhubarb by removing ends and cutting into lengths of no more than 2", then rinse the cut pieces under a cold tap. Add them to a saucepan and fill the saucepan with cold water to one and a half-2" above the cut pieces. Bring to boil. As you bring the rhubarb to the boil . As/whilst rhubarb is on boil, turn heat down for a minute and squeeze the juice of a whole half of a lemon into the rhubarb/water.Then return to heat. In photo 1 you can see the rhubarb and banana and a bowl of cereal which is suitable for this recipe. There may be many other but this does work with this particularly nicely. The serving in the bowl is quite a large serving though you should not need more that 2 tablespoonfuls ideally, though more if you like it like that obviously. You can also use a crushed bran flake cereal bt dont crush them too small please. When the rhubarb is cooked spoon on some of the cereal and slice the banana (Photos 2/3). Maybe keep any remaining rhubarb juice in a container in your fridge but consume within 48 hours.
