You could try putting some brown lentils into a saucepan bring them to the boil and simmer on high then careful scoop off or tip some of the top water away and top up carefully with boiling water from a kettle but be careful! Or ask someone to help if not 100% happy about it. Then carefully add a vegetable stock cube and a heaped tablespoonful of tomato puree. When the lentils are cooked add some small peices of goat cheese or spoon some of this preparation over the top, only half of a single portion.
Tip the rest back in with the remaining lentils.
Also why not try preppng the lentils as suggested but add only 2 tablespoons of grated parmesan.
