When boiled, carefully remove the potatoes and mash them and add a good squeeze
from the remaining piece of lemon. Do not disgard the potato water.
Plus add some salt and pepper to suit your own taste and cover with clingfilm.
Put the chillies and ginger into a frying pan and add some of the potato water. Pic 3
Cook on a medium to low heat and add the mushrooms. Feel free to add a little more
water if you absolutely need to.
When cooked through (Pic 4), Get an ovenproof dish and put up to one inch of the
potato mixture into it. Then add the capers to the mushroom and chilli mixture.
Put a layer of the mushroom, caper and chilli mixture over the potato (Pic 5).
