The SS Tone

Seems like a lot of ingredients but and whilst my parsnips were past their sell by date and so was my celery, i couldn't waste them. They still felt 100% fresh so it's a credit to the industry too. And again whilst i would say use fresh.... i wasn't sure when i bought them what i would be doing with them. So many ideas but i hope you find this as tasty and challenging in a kind way as i did.

Ingredients: Celery A pack of or 4 or 5 parsnips A half of a red onion I decided not to use the white onion in the photo. Two lemons One vegetable stock cube One level tablespoon of ground thyme A mere, not even a quarter of a level mustardspoonful of salt (so really not much) A red capsicum pepper 7 or 8 cloves of garlic Some ginger root (I used two thirds of the amount in photo on this dish) A tin of anchovies, there is a surprise on this. Even if you are not keen on anchovies. Wow! One tin of butter beans or equivalent prepared weight of if not using tinned. Usually around 240g drained but use maybe up to 400g if you want to. The recipe can take it. 2 large plantain one to one and a half teaspoonfuls of tabasco sauce 8 dried chillies (the brand i used in this is Niru) Some (optional) mature cheddar or similar cheese. I realise there are different ways to cook plantain because i saw my friend Phyllis cooking it some years ago but this recipe is a multi-part recipe, with different options and courses. And where as plantain which i hadn'tactually tried until this recipe can be cooked sweeter because plantain is not as sweet as a regular banana, this recipe is savoury but with a somewhat hot and sweet bitter sweet twist. I have no doubt you could even sprinkle sugar over this recipe but why do that if you don't need to or are wanting to lose weight? Sure....maybe you burn it off. (You will need a blender or mixer for this recipe). Half fill a large saucepan with cold water. Put it onto your cooker, medium heat. Peel and chop half a red onion and add to the water. Turn up heat. Reduce to hot simmer once boiling. In the meantime get your clean blender ready. Carefully remove the seed core from the pepper by cutting around the green bit and pulling the seeds out and wash under a cold tap. Reduce heat on saucepan and get another saucepan or a vessel/ large jug. Scoop out with a ladle all of the red onions and place them with a third of the liquid from the saucepan. Put to one side (not on heat).
